Ingredients
1000mL Spice &Vibes™
½ cup vegetable oil
1 medium red onion sliced
4 table spoons tomato paste
2 dried bay leaves
1 tablespoon thyme
1 tablespoon curry powder
Salt to taste
Black pepper to taste
3 cups low sodium chicken stock
4 cups long grain rice
2 tablespoon butter (optional)
Instructions
Heat cooking oil in a large pan over medium heat. Add diced onions and let them cook for about 3 minutes or until soft.
Add tomato paste and fry for about 5 minutes. Then add dried bay leaves and leave for two more minutes or until fragrant.
Add 1000mL or 2 jars of Spice & Vibes™ and allow to cook on low heat until reduced and thickened. Estimated time 10 to 15 minutes.
Season with thyme, salt and pepper to taste. Stir and simmer for another 2-5 minutes.
Add rinsed rice to the sauce and stir until well coated. Then add chicken stock (optionally room temperature butter) and mix. Cover the pot and bring to a quick boil over high heat.
Once boiling, reduce heat to low and steam rice until cooked. Estimated time 30 minutes.
Serve with fried plantain, roasted chicken, or salad and enjoy
