Jollof Rice

Ingredients

  • 1000mL Spice &Vibes

  • ½ cup vegetable oil

  • 1 medium red onion sliced

  • 4 table spoons tomato paste

  • 2 dried bay leaves

  • 1 tablespoon thyme

  • 1 tablespoon curry powder

  • Salt to taste

  • Black pepper to taste

  • 3 cups low sodium chicken stock

  • 4 cups long grain rice

  • 2 tablespoon butter (optional)

Instructions

  1. Heat cooking oil in a large pan over medium heat. Add diced onions and let them cook for about 3 minutes or until soft.

  2. Add tomato paste and fry for about 5 minutes. Then add dried bay leaves and leave for two more minutes or until fragrant.

  3. Add 1000mL or 2 jars of Spice & Vibesand allow to cook on low heat until reduced and thickened. Estimated time 10 to 15 minutes.

  4. Season with thyme, salt and pepper to taste. Stir and simmer for another 2-5 minutes.

  5. Add rinsed rice to the sauce and stir until well coated. Then add chicken stock (optionally room temperature butter) and mix. Cover the pot and bring to a quick boil over high heat.

  6. Once boiling, reduce heat to low and steam rice until cooked. Estimated time 30 minutes.

  7. Serve with fried plantain, roasted chicken, or salad and enjoy
