Chicken Stew

Ingredients

  • 500 mL Spice &Vibes

  • ½ cup vegetable oil

  • 2 lbs. chicken thighs

  • 1 cup chicken stock

  • ½ red onion

  • 1 chicken bouillon cube

  • ½ teaspoon thyme

  • ½ teaspoon black pepper

  • ½ teaspoon curry powder

  • ½ teaspoon salt

Instructions

  1. Vinegar rinse (if desired) and pat dry the chicken. Then rub the chicken with salt and pepper until coated and put aside.

  2. Heat oil in a pan then brown the chicken on each side until seared. Estimated time 10 minutes each side.

  3. Dice the onion and remove chicken from the pan and set aside. Then add the diced onion to the same pan and sauté until soft and translucent.

  4. Add 500 mL of Spice & Vibesto the pan and cook for 5 minutes on medium heat.

  5. Add the chicken back into the pan along with chicken stock, bouillon, black pepper, curry, and thyme

  6. Cook for 20 minutes and add salt to taste. Serve with rice, and enjoy
